A full English on the menu, a hot hotel breakfast or a sausage bap for lunch: British and Irish breakfast sausages give these dishes their familiar character. Looking for sausages for your hospitality business? Green Acres supplies Mallons breakfast sausages, Cumberland sausages and Irish sausages, alongside Clonakilty breakfast sausages.
Our Mallons catering cases contain 5 kg of IQF sausages. They are individually frozen and loose in the case. Take out what you need: a handful for a few orders or a larger quantity for breakfast service. The rest stays in the freezer.

Which sausages belong in a full English?
English breakfast sausages usually means the sausages served alongside bacon, eggs and baked beans in a full English. Irish sausages also work well in this breakfast. The name of the dish does not mean every ingredient has to come from England.
For a pub serving a full English, a hotel welcoming British guests or a brunch café offering a breakfast roll, these are familiar product names. Your choice depends on the flavour you want on the menu and the sausage size that suits your dish.
At Green Acres, you can choose from:

IQF means individually frozen and loose
IQF stands for Individually Quick Frozen: each sausage is rapidly frozen separately. Our catering sausages therefore stay loose rather than sticking together in one large frozen block.
That makes a 5 kg case practical even if you do not serve large numbers of breakfasts every morning. You do not have to use the whole case at once or thaw a large quantity just to separate a few sausages. Take the portion you need and keep the rest frozen.
On a quiet morning, take a handful. For a busy weekend service, take more. The same catering case can serve changing guest numbers without having to divide everything into smaller portions in advance.
Individually frozen describes the pack format and portioning. Follow the product instructions for preparation and storage.
From a full English to a sausage bap
Breakfast sausages can appear in several dishes on your menu. A catering case need not be reserved solely for the breakfast buffet.
- Full English breakfast: serve sausages with back bacon, eggs, baked beans and the other components of your breakfast.
- Irish breakfast: combine Irish sausages with bacon, eggs and black or white pudding.
- Sausage bap: fill a soft bread roll with sausages and brown sauce or ketchup.
- Breakfast roll: offer a more generously filled roll with sausages, bacon and egg.
Adapt these serving ideas to your own menu. Set a standard portion for each dish so the kitchen knows how much belongs on the plate or in the roll.
Buying breakfast sausages for hotels and hospitality
When buying breakfast sausages, the pack format and your kitchen's workflow matter as much as the quantity you use in a single morning. Loose frozen sausages let you draw on your stock a portion at a time. Match the number of cases you order to your usage, available freezer space and ordering schedule.
To calculate breakfast costs, start with the chosen product and the number of sausages per dish. Compare the cost per served portion: the case weight alone does not tell you how many breakfasts it will make.
Do not treat 8s or 16s as the total number of sausages in a catering case. Ask for the individual sausage weight or count per case when choosing a product, so you order the right quantity.
